Good-Luck Braised Cabbage for the New Year

Want 2018 to be a year of good luck, good health and prosperity? Then start with my good-luck braised cabbage.

There are so many traditions about what food brings good luck for the new year–black-eyed peas, pork and sauerkraut, grapes, greens, corn bread and I could go on and on. But my favorite is braised cabbage. I think you’ll really like this version–even if you’re not a cabbage-lover.

It’s slow-cooked and becomes sweet and caramelized with the onions, shallots, carrots and mushrooms.
INGREDIENTS
BRAISED CABBAGE
Preheat oven to 375.

Spray Pam on bottom of a 9 x 12 baking dish.

Arrange cabbage, onions, carrots, shallots, garlic and mushrooms in the baking dish. Pour chicken broth into dish and then drizzle with olive oil. Sprinkle with red pepper flakes, salt and pepper. I like it spicy so I go heavy on the red pepper.

Cover tightly with aluminum foil and bake for 1 hour. It will look like this.

Turn cabbage over, cover with foil again and continue to cook until cabbage is fork tender, anywhere from 10-30 minutes.

Remove foil and put under the broiler until lightly browned on top, about 3-5 minutes.

Season with salt and pepper and serve hot, warm or even cold the next day.
