Franco’s Linguine with Clams


Here’s another favorite of mine from Tuscookany–Franco’s linguine with clams. 

This is super easy to make and is ready in no time. I cheated this time and bought fresh pasta at the market…if you’re going to cheat, at least cheat with good fresh pasta.

INGREDIENTS
LINGUINE WITH CLAMS
  • 1 kg / 2 lb fresh clams
  • 2 cloves garlic, chopped
  • 200 g / 7 oz cherry tomatoes
  • 1/2 tsp chili powder
  • 500 g / 1 lb linguine
  • 1 handful Italian parsley, chopped
  • 5 TBS olive oil
Wash the clams well–soak in Club Soda to clean.

Cook the linguine in salted water until almost done. Save some pasta water for the sauce. 

Pour the olive oil into a large frying pan and when it’s hot add the garlic and chili powder and fry until golden.

Add the clams and cover the pan and let it cook for a few minutes on high until all the clams open.

Scoop out the clams and set aside.

Add the tomatoes to the frying pan and let them cook for about a minute, then add a small ladle of water from the pasta.

Drain the linguine and put it into the frying pan and add the clams, mix well and add a little more pasta water, if needed. Add the chopped parsley and serve.
