The Wedge. A classic salad that’s practically fool-proof. It’s also a salad I never think to make at home. I gave a try last night and it was delicious and super easy.
INGREDIENTS
- Iceberg lettuce
- Cherry tomatoes
- Bleu cheese–crumbled
- Bacon–crisp and crumbled
- Red onion–chopped into small pieces or sliced super thin
- Bob’s Bleu Cheese Dressing
- Pinot Grigio vinegar
- Salt & Pepper
A few tips:
- Use really good bacon…cook until crisp and crumble
- Mix a little vinegar into the bleu cheese dressing to thin it just a bit
- Use a good bleu cheese. Buy a whole chunk and crumble it…don’t use the pre-crumbled–it’s too small
To assemble:
- Cut a head of iceberg lettuce into wedges–4 or 8 depending on serving size
- Drizzle dressing over wedge
- Top with tomatoes, bleu cheese, red onion and bacon
- Season with salt and pepper
