The Classic Wedge

The Wedge. A classic salad that’s practically fool-proof. It’s also a salad I never think to make at home. I gave a try last night and it was delicious and super easy.

INGREDIENTS
  • Iceberg lettuce
  • Cherry tomatoes
  • Bleu cheese–crumbled
  • Bacon–crisp and crumbled
  • Red onion–chopped into small pieces or sliced super thin
  • Bob’s Bleu Cheese Dressing
  • Pinot Grigio vinegar
  • Salt & Pepper
A few tips:
  • Use really good bacon…cook until crisp and crumble
  • Mix a little vinegar into the bleu cheese dressing to thin it just a bit
  • Use a good bleu cheese. Buy a whole chunk and crumble it…don’t use the pre-crumbled–it’s too small
To assemble:
  • Cut a head of iceberg lettuce into wedges–4 or 8 depending on serving size
  • Drizzle dressing over wedge
  • Top with tomatoes, bleu cheese, red onion and bacon
  • Season with salt and pepper
