These have been my all-time favorite cookies since I can remember. I know they might not be the most photogenic cookie, but what they lack in good looks, they make up for in delicious, mouth-watering, chocolatey good taste. And as their name implies, you can make them in just a few minutes.
Minute cookies are popular during the holidays, but I enjoy them all year.
- 2 cups sugar
- 1/4 cup butter (1/2 stick)
- 1/2 cup milk
- 1/4 cup cocoa
- 1/2 cup peanut butter
- 2 1/2 cups Quaker oats
- 1 tsp. vanilla
You won’t believe how easy these are to make.
Put sugar, milk, butter and cocoa in a large sauce pan.
Heat on medium high, stirring occasionally and bring to rolling boil. Stir and boil for exactly one minute then remove from heat.
Stir in the oats and vanilla.
Add the peanut butter.
Stir until well blended.
Line a cookie sheet with parchment paper and drop by teaspoon. Chill in the fridge.
Arrange on a nice platter, set them out for your friends and family and watch them disappear.
