If a picture’s worth a thousand words, then here it is. And it’s just in time for Super Bowl Sunday.
In case any of your party guests want to have at least one healthy bite to eat, they will love this. When I tested it on my friends they didn’t even realize it was healthy. It really is that good. After you cook the beets, you can make this in just a few minutes.
INGREDIENTS FOR BEET AND HONEY-GOAT-CHEESE SKEWERS
- 4-5 large beets
- 1 10 oz. package honey goat cheese
- micro arugula
- a couple of basil leaves
- skewer sticks
- balsamic glaze or a squeeze of fresh orange (optional)
Cook the beets according to my recipe. Let them cool completely and carefully cut into small cubes, about 1 1/2 inch square.
Cut the goat cheese into equal size cubes.
Carefully assemble by pushing skewer through the beet, then the cheese, then another beet.
Arrange on a bed of micro arugula. Garnish with basil.
You can drizzle balsamic glaze or squeeze the orange juice on at this time if you’d like a little more flavor.
