Endive "Chips" with Blue Cheese Dip and Bacon Dust

Need a simple, yet elegant appetizer to take to a New Year’s Eve party? I have just the recipe for you! 

 ENDIVE “CHIPS” WITH BLUE CHEESE DIP AND BACON DUST
  • 1/2 cup Greek yogurt
  • 1/2 cup Gorgonzola cheese, crumbled
  • 10 strips of bacon, chopped fine and cooked until crumbly
  • 1 tsp chopped rosemary
  • 1/2 tsp freshly ground pepper
  • 6-10 endive–depending on the size

Cut the ends off the endive and arrange the leaves in a large bowl.

Mix the yogurt and Gorgonzola with half the rosemary and pepper.

Fry bacon until crisp. Drain on a paper towel and then put in a small food processor to make the bacon “dust”.

Sprinkle the rest of the rosemary on the dip and arrange on a nice platter….
…and let your guests build their own bite. 

*The original recipe called for a lot less bacon, but I wanted to have more than just a little dust.
