This just might be the shortest blog I have ever done! But it’s one of the best ways to make corn–especially if you’re feeding a large group.
INGREDIENTS FOR “SLIGHTLY SPICY” CORN ON THE COB
- fresh corn on the cob
- softened butter
- jalapeño, chopped fine
- chili powder
- fresh squeezed lime
- salt & pepper
- cilantro, chopped
Heat the BBQ to medium high.
In a small bowl mix butter, jalapeno, chili powder, lime juice. Rub generously on corn cobs and wrap each in foil.
Grill over medium high heat until heated through, about 5-10 minutes.
Remove from foil, season with salt, pepper and cilantro.
Stack on a platter and wait to hear how much everyone loves it.
You can adjust the seasonings to your own taste–a lot if you like a kick, a little if you like it mild.
