Holiday Season is here–time to get together with friends and share great times and great meals. But it’s also a hectic time. There’s not a lot of time to cook, so I have a super simple blue cheese, craisin, walnut endive appetizer that’s always a big hit. You can really pull it all together in about 10 minutes.
INGREDIENTS
- 6-7 large endive, end cut and separated
- crumbled Blue Cheese
- craisins
- toasted walnut pieces
- Balsamic glaze (I was lucky enough to have some that Franco made at Tuscookany.)
This is all you’ll need.
Separate the endive leaves. Only use the largest ones.
Toast the walnut pieces over medium high heat until fragrant, about 5 minutes. Be careful not to burn them. Immediately remove from hot pan and let cool.
To assemble, just fill with a little blue cheese, some craisins and walnuts then drizzle a little balsamic. Arrange on a platter and serve. You can make them a little ahead of time and keep them at room temperature.
