Warm Potato, Green Bean & Red Onion Salad Ready in 20 Minutes!

I’ve always loved Hot German Potato Salad. This is a much healthier version but still packs all the flavor and is ready in 20 minutes…or less! I almost feel like I’m cheating when I make something this tasty that is so fast and easy to make.

INGREDIENTS FOR WARM POTATO, GREEN BEAN & RED ONION SALAD
  • 15 small red potatoes
  • 1/2 red onion, sliced thin
  • 1 package haricot verts
  • 1/4 cup red wine vinegar
  • 1 1/2 tsp. Grey Poupon mustard
  • 1/4 cup olive oil
  • salt & pepper to taste

I take the easy route and boil the potatoes in the microwave–it takes about 15 minutes.

While the potatoes are cooking, cut the onion. I like to use my mandoline.

The dressing is super simple. Start with the mustard, vinegar salt and pepper and whisk in the olive oil to emulsify. I like my dressing really tangy. If you like it milder, add more olive oil.

Can it get any easier than this? Microwaveable green beans! Cook according to package direction. 

When the potatoes are done, put the green beans in the microwave and toss the potatoes with 1/2 of the dressing. 

Cut the beans into bite size pieces when they’re done.

Toss the beans withe the potatoes and onions and season with salt and pepper. 

Spoon into a nice serving bowl…or…

If you’re really hungry, put them right on a plate and grab a fork. This is a great summer salad with chicken, beef or fish. Hope you like it as much as I do!
