- fresh corn on the cob
- some good olive oil
- balsamic vinegar
- freshly grated Parmesan cheese (I cheated and bought mine grated from Trader Joe’s. It was perfect.)
- Red pepper flakes
Husk the corn and rub all over with a light coating of olive oil.
Place on hot grill and cook until you have nice char marks–about 5-10 minutes depending on how hot your grill is.
Next, fill another large shallow dish with Parmesan and roll the corn in the cheese.
Transfer to a platter and sprinkle with red pepper flakes.
I can’t wait for you to try this. The sweetness of the balsamic and the saltiness of the Parmesan is just heaven.
And…if you have any leftover…try this: Add leftover corn, balsamic and Parmesan to a bowl of baby spinach, top with a little olive oil and toasted almond slices, toss and serve. It’s my new favorite salad.
