Need A Side Dish In A Hurry? Try This Super Simple 3-Bean Salad With Fresh Herbs

Did you ever find yourself in that dreaded situation where you’re going to a pot luck but didn’t have time…or worse…almost forgot that you need to bring something?

This super simple 3-Bean Salad will solve that problem forever. And it will be a big hit, too!

I remember growing up with a version of this salad, but I’ve updated it with fresh herbs and a home-made dressing.
Best yet…it’s ready in no time.

SUPER SIMPLE 3-BEAN SALAD
INGREDIENTS
  • fresh green beans
  • 1 can red kidney beans
  • 1 can garbanzo beans
  • 1/2 red onion, sliced thin (on the mandoline if you have one)
  • 2 celery stalks, sliced thin
  • chopped parsley
  • chopped basil
For the dressing: Mix together the following ingredients. I use 1/3 olive oil and 2/3 vinegar because I like it tangy. But you can adjust to your taste.
  • olive oil
  • red wine vinegar
  • a teaspoon Grey Poupon mustard
  • salt and pepper to taste

Trim green beans and cut into 2-3″ pieces. Blanch in boiling water for 2-3 minutes until crisp tender. Quickly put in ice water to stop the cooking.

Rinse kidney and garbanzo beans in cold water.

Put all the beans in a bowl and add the sliced red onion and celery.

Add the chopped parsley and basil. Toss with the dressing and you’re ready to go. 

If you’re not in a huge hurry, refrigerate overnight–it’s even better the next day.
