I was craving a really good BLT–you know the kind–crispy bacon, juicy tomatoes, crunchy lettuce and a creamy dressing on perfect sourdough toast. But at the same time I didn’t want to indulge in all those calories. Valentine’s Day had taken it’s toll.
So I came up with a fairly low-cal alternative–the BLT Salad. And I must say, it was good and my craving was satisfied. And best yet–it’s ready in the time it takes to cook the bacon. I cooked mine in the microwave to speed up the process. Let’s face it; I was hungry.
Next time you’re hungry for a BLT, turn it into a guilt-free BLT salad.
INGREDIENTS
- 1/3 cup Green yogurt
- 1 TBS red wine vinegar
- 1 TBS ketchup
- 1 tsp Sriracha
- 1 head romaine lettuce
- 1 large juicy tomato
- 8 slices bacon, divided
- croutons
- salt and pepper to taste
For the dressing: In a small bowl combine yogurt, vinegar, ketchup, and Sriracha.
Chop the lettuce and put in a large bowl.
Chop tomatoes and put on top of the lettuce.
Crumble 6 slices of bacon and put on top of the tomatoes.
Toss a few croutons into the salad. Not too many as they tend to get soggy.
Put a dollop of the dressing on top and toss. Add more dressing as needed, you don’t want it too wet.
Pile high onto plates and garnish with the remaining bacon and croutons. Season with salt and pepper. Serve immediately…and let me know what you think!
