Here’s a healthy start to the new year and it just might be the moistest, juiciest, most flavorful chicken you’ve ever had! It’s definitely one of my new favorites. With just a few simple ingredients you can make a healthy meal your family will love.
INGREDIENTS
- 2 large boneless, skinless chicken breasts
- 2 lemons
- 4 springs of rosemary
- 1 tablespoon olive oil
- 2 cloves garlic
- 1/4 cup chicken broth
- paprika
- salt and pepper
Fresh from the garden–lemons and rosemary. But don’t worry if you buy yours at the market.
Finely chop 2 of the rosemary sprigs and the garlic.
Place chicken in oven proof pan. Gently rub the chicken with olive oil then press rosemary-garlic mixture into the breasts. Season with salt, pepper and paprika. Put remaining rosemary sprigs on top of the chicken. Add chicken broth to pan and squeeze one lemon into the juice.
Bake at 350 until cooked through, about 20-30 minutes.
Slice chicken and arrange on a platter. Pour au jus from pan on top of the breasts. Squeeze the 2nd lemon on top and serve.
