Need a quick and easy side dish for a pot luck? Have company coming and you don’t want to spend too much time in the kitchen? Here’s the perfect solution–simple oven-roasted red potatoes and broccolini!
INGREDIENTS
- 1 bunch broccolini
- 5 red potatoes, cut in quarters
- 2 TBS olive oil (about)
- Kosher salt & pepper
That’s it for ingredients–how simple is that!
Preheat oven to 400.
Cut potatoes into quarters and cut broccolini into small florets, then cut in half again. I actually grew these potatoes–home grown really have a lot more flavor and they’re so easy to grow. Just cut a potato in half and put it in the dirt. Wait a few months, go dig in the dirt and you’ll have potatoes! Really.
Toss potatoes and broccoli in olive oil and place on a cookie sheet. Season with salt and pepper.
Bake at 400 until both are tender, about 25-35 minutes. The potatoes should look like this when they’re done.
Transfer to a serving platter, and as always Enjoy!
