Thanks to my good friend, Jonna Stoycos, I have the perfect, and most unusual, tequila-infused guacamole recipe. But this is definitely not one for the kids, if you know what I mean.
Jonna and I met when our kids were in kindergarten…Jake said she looked just like Princess Di. (He was right). Over the years we traveled with our kids on great family vacations but last February we actually took a trip to Turks and Caicos without kids. It was while lounging on the beach enjoying an umbrella cocktail that Jonna told me about her “famous” tequila-infused guacamole that she and her husband, Steve (a gourmet cook) liked to serve on the 5th (6th, 7th or any day) of May.
It took great restraint on my part not to share sooner, but this one just had to wait for Cinco de Mayo. So…here we go.
Here’s what you’re going to need…along with a few spices.
Mix onion, jalapeno, 1/2 fresh squeezed lime juice, tomato and cilantro in a large bowl.
Stir and add tequila. Now for the important part. Cover and marinate at room temperature for 4 hours.
Prior to serving, add avocados to bowl and gently mash with a fork.
Now for the seasoning. Add salt, pepper and a “shake-ful” of Chipotle seasoning. Squeeze half a lime over mixture. Stir and adjust seasonings to taste.
Spoon into a nice bowl and serve with chips.
I guess this should come with a warning to not only “drink-responsibly” on Cinco de Mayo, but depending on how you measure a shot, you need to “eat-responsibly”, too!
Like Jonna and Steve, you don’t have to wait until the 5th of May to serve this.
