Doesn’t this look delicious? It’s the perfect sexy supper to make for your Valentine–and it’s fool proof, even if you’re a nervous cook. Just follow my easy tips and you’ll never need to cut into a steak again to make sure it’s done. (Admit it, you’ve done that before, haven’t you? I know, ’cause I used to do that, too!)
Start with a heart-shaped appetizer to show how much you love them. I have this shrimp recipe in my 12.22.11 blog (A Festive Holiday Buffet), but you can buy already cooked shrimp and arrange them like this on a nice platter.
I love accidental discoveries like this one. I was asked to bring an appetizer to a party recently and as I was arranging them on the platter I spotted the heart pattern–voila! So I had to share with you. I think kids would find this a fun way to each shrimp, too.
But back to Valentine’s Day…
Start with a really good steak. This is a 2 1/2 inch thick T-bone.
Add seasoning. I use Worcestershire and Montreal steak seasoning. I put it back in the fridge for at least an hour and then VERY IMPORTANT, let sit out for at least an hour before cooking. This allows meat to cook evenly.
Now here’s the secret to a perfectly BBQ’d steak.
1. Heat grill to at least 500 degrees. My grill has an infrared space and gets really, really hot.
2. Put steak on grill and sear for about 3-5 minutes. When you go to turn it, it shouldn’t stick.
3. Turn steak and sear other side for about 3-4 minutes.
4. Move steak to center of grill and turn off the center burner. Think MOM. Medium-Off-Medium. That’s how the grill should be. With the steak in the center it won’t burn, but will cook to medium/rare in about 5 minutes.

When you take the steak off the grill it needs to rest for 7-10 minutes before you cut it so the juices will stay in the steak instead of running onto the plate!
And there you have it. You may need to experiment a bit with your grill to get the timing right, but once you’ve got it down, you’ll have a perfect steak every time.
Add a couple side dishes. I love sauteed mushrooms with steak–I finish them with a little Vermouth.
Make some red potatoes. (Red for Valentine’s Day, of course). I just boiled these, then tossed in minced garlic and olive oil and put them back on the BBQ to get the grill marks. When they were done I sprinkled them with some fresh parsley from the garden.
And if you like, add some grilled onions. It’s safe to have onions on the steak if you’re both eating them and I think they add a great extra flavor to the meat.
And one last thing…you may not need it, but if you like steak sauce I strongly recommend HP Sauce. It’s sometimes hard to find in Californian but worth searching for. An English friend of mine introduced me to it years ago and I love it on my steak.
