I saw this in Allrecipes today and thought I’d give it a test drive. It was so good I just had to share right away.
I actually used both jalapenos and Anaheim chilies thinking the jalapenos might be to spicy for some people but they lost a lot of their heat in the cooking process.
So here goes…it couldn’t be any easier than this. And I just had another bite–they’re good at room temperature.
3-4 Anaheim chilies
1 8 oz. package cream cheese, room temperature
1 lb. bacon, center cut
Heat BBQ to high.
Slice peppers in half and remove seeds and membranes.
Use a knife to fill with cream cheese.
Wrap each with one slice of bacon. A couple of the Anaheims required two slices.
Grill on hot BBQ. I started with the peppers directly on the grill but after about 5 minutes I worried they were burning on the bottom so I moved them to a cookie sheet and put them back on the grill for about 5 more minutes.
I wasn’t sure if the BBQ was the best idea so I cooked this Anaheim in the oven on Broil. I think it worked better on the BBQ. Also, because Anaheims are bigger it didn’t soften as much as the jalapeno, but it was still good.
And of course… this is the uncropped…with a bite out of it.
So if you need a last minute idea for a Super Bowl party, this is a good one.
