Tomato-Palooza…and a Cucumber

Nothing says summer better than sweet, juicy tomatoes fresh off the vine! 

Except maybe a home-grown cucumber. Put them together and you have a delicious summer salad.

Right now I have an abundance of all types of tomatoes in my garden–stupice, cherry, San Marzano and other heirlooms. Every morning when I go out to check on them I’m amazed to see how many have turned bright tomato-orange overnight. I just assumed that happened during the day when the sun was out.

So with tomato-palooza on my hands and my first cucumber of the season, it was time for a simple salad.

 

INGREDIENTS
  • Vine ripe tomatoes
  • Cucumber
  • Basil
  • Sweet onions
  • Blue cheese or feta if you prefer
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt and Pepper
This is the easiest salad you’ll ever make and you’ll get more compliments than you can believe. (Sometimes I change it up and use canola oil and seasoned rice wine vinegar for a bit of an Asian flair).
 
Cut all ingredients and arrange on a nice platter. Remember–presentation is everything. We eat with our eyes first. If it looks great, it tastes even better.
 
Drizzle with olive oil and add a splash of vinegar. Crumble the blue cheese, season with salt and pepper and voila. What could be easier.
 
Serve with a chilled sliced chicken breast and you have a fabulous light and tasty summer supper. Set a table outdoors and you’ll feel like you’re on vacation in Italy!
