My good friends, Mark and Jeri Berland live in Denver and I don’t get to see them as often as I’d like, but every time I make Jeri’s delicious salad it’s like being in her kitchen.
I picked the Romaine from my garden today. I’ve learned that lettuces like cool weather and I’ve had a great variety all winter. I have to be really careful because the bugs like to share the lettuce. After I pick it, I do a triple wash.
Even if you’re worried about not having a green thumb I strongly suggest you start with lettuce. If you don’t want to plant seeds, I recommend buying plants from Roger’s Gardens. They may cost a little more, but they’re always healthy and never have bugs or diseases.
So whether you buy your Romaine or grow it yourself, here’s Jeri’s delicious Caesar Recipe:
Ingredients:
3 cloves garlic, minced
1/2 tsp dry mustard
1/2 tsp Worcestershire
6 TBS grated Parmesan
2 TBS red wine vinegar
2 TBS fresh squeezed lemon
1/2 cup extra virgin olive oil
salt and pepper to taste
Romaine lettuce
croutons*
Mix together garlic, mustard, Worcestershire and 1 TBS Parmesan cheese.
Whisk vinegar, lemon juice and drizzle in olive oil while still whisking. Chill.
Prior to serving, toss Romaine lettuce with remaining 5 TBS Parmesan and croutons.
Pour dressing over it, toss and serve.
